A region bordering Burgundy, this production area is located about fifteen kilometres south-east of Auxerre, more precisely within the municipalities of Cravant, Irancy and Vincelottes, in the Yonne department. Classified as a communal AOC in 1999. Area under production: just over 125 hectares.The total area covered is 367 hectares. Grey grape varieties: Pinot Gris as a secondary variety for a maximum of 10%; black grape varieties: Pinot Noir and César as secondary varieties for a maximum of 10%. Vinified as red wine only. It can be kept and requires ageing for several years, sometimes 20 years or more. Ideal serving temperature: between 16 and 17°C. Enjoy with a veal roulade Nivernaise, coq au vin, kidneys in Madeira sauce or beef bourguignon.
