AOC and IGP are two quality labels that can be claimed by agricultural products rooted in a terroir that gives them their name. As this name refers to a region (geographical designation) or is strongly linked to it (traditional designation), it is important that it is only used for products that meet three main conditions: origin - link to the terroir and tradition - production method that respects the product (limited industrialisation).
