A machine sets it in motion, according to a specific electronic programme that regulates both the gradual vertical inclination and the rotation of the bottles, imparting jolts to achieve an effect similar to that produced by manual riddling on racks for sparkling wines using the traditional method. This saves a considerable amount of time, space and labour, since manual riddling on racks takes around 6 to 8 weeks, while riddling on gyropalettes takes only one to two weeks.
Manual riddling is now only used for prestige cuvées. As these are produced in smaller volumes, it is not cost-effective to use a gyropalette.
This mechanical riddling process was created in Catalonia, Spain, in the 1970s under the Girasol brand.
