The wine is also often made from two or three grape varieties (mainly Chasselas, Rèze and Hermitage Blanc (Marsanne) in Grimentz) which, after fermentation, is stored in a larch barrel that is never completely emptied. This means that countless vintages coexist, with the latest one layered on top of the previous ones. Glacier wine is still produced in certain cellars in the Val d'Anniviers, for example at Clos du Château Ravire in Veyras sur Sierre in Valais. This bourgeois wine has always been used for social occasions, such as gatherings, visits from distinguished guests, and meetings with political, religious and military figures. Its slightly wild flavour is well suited to the temperament of the people who live up there.
