Some believe that the word "galantine" comes from the Gothic root "gal", meaning jelly, which first formed the word "galatine" and then "galantine", but there is another possible origin. It may be that the word galantine comes from "géline" or "galine", which in the past meant "hen", since these dishes were originally made with poultry. It was only later, towards the end ofthe 17th century, that they began to be made with various birds, meat from the butcher and even fish.
