Among the grapes grown in Veneto is Friularo. It is a grape with a very intense red colour, rich in sugars, acids and tannins. But its main characteristic is that it is harvested very late, in November, sometimes after the first frosts have already stripped the vines of all their leaves, allowing the bunches to enjoy the last of the autumn sun. Some of the grapes harvested in small crates are left to dry naturally in the fruit store for 40 to 50 days. They are then gently crushed and fermentation, which takes place during the winter, is slow and therefore very long. This produces a wine with a high alcohol content, to which wine made from fresh grapes is added. This is followed by a long ageing process in barrels and then in large casks. This wine is the perfect accompaniment to red meat dishes, roasts or braised meats, game and strong cheeses.
