In the 19th century, ice merchants made their fortune selling blocks of ice which, when immersed in fermentation vats, lowered the temperature! Today, the control of cold has revolutionised winemaking. Winemakers have temperature-controlled vats that improve the aromatic qualities of the wines produced.
