Back Pronounced "Fissin". A Burgundy appellation in the Côte de Nuits region which, along with Marsannay, produces powerful, tannic wines with good ageing potential. Located 11 kilometres south-west of Dijon, on the right-hand side of the N74 road towards Nuits-Saint-Georges, more precisely within the boundaries of the commune of Fixin in the Côte d'Or department. Classified as a communal AOC with five premiers crus in 1936. Area under production: just under 100 hectares, of which just over 23 hectares are classified as premier cru. The total area is 131.60 hectares. White grape varieties: Chardonnay and Pinot Blanc; grey: Pinot Beurot; black: Pinot Noir and Pinot Liébault. The incorporation of white and grey grape varieties such as Chardonnay and Pinot into the vineyards is still permitted, provided that they do not exceed 15%. A very small quantity is vinified as white wine and most of it as red wine. It can be kept for a very long time, from 5 to 15 years, or even longer depending on the premier cru and the vintage. Ideal serving temperature: between 8 and 10°C for white; between 16 and 17°C for red. Pairings: red with game birds or thrush or woodcock pâté; white with freshwater fish and seafood. Places to visit: the Château de Brochon, built in 1900 on the model of Azay-le-Rideau, and the manor house of Clos de la Perrière, one of the most renowned premier crus.
