Vinified as red wine only after ageing, which ends on 1 September of the year following the harvest. It can be kept for 2 to 10 years depending on the vintage. Ideal serving temperature: between 16 and 17°C. Pair with: red meat, hare or rabbit stew, preferably game such as wild boar.
