Definition: Fino

A very light, barely golden variety of sherry, the lightest of its family. Its natural and organic vinification under a veil depends on the quality of the flor, under the effect of Mycoderma vini bacteria. Fino develops an intense aroma of walnuts and dried almonds, with a slightly bitter finish. Fino, with its dry taste, surprises the novice. It is best served chilled with tapas.
