Appellation from the Languedoc region. Production area located at altitude, between Bédarieux and Béziers, more precisely within the municipalities of Autignac, Cabrerolles, Caussiniojouls, Faugères, Fos, Laurens and Roquessels, in the Hérault department. Classified as an AOC in 1982. Area under production: nearly 2,000 hectares. Black grape varieties: Carignan (maximum 40%), Cinsaut (maximum 20%), Grenache, Lledoner Pelut, Mourvèdre and Syrah. Grenache and Lledoner Pelut must together or separately represent a minimum of 20%; Mourvèdre and Syrah together a minimum of 15%, with a minimum of 5% for Mourvèdre; Syrah alone must represent a minimum of 15%. Grenache, Lledoner Pelut, Mourvèdre and Syrah together must represent a minimum of 50%. Most of the wine is vinified as rosé and red (nearly 85%). It can be kept: drink young for rosé, 5 to 8 years for red. Ideal serving temperature: between 8 and 10°C for rosé; between 16 and 17°C for red. Pair with: rosé with cold meats or grilled meats accompanied by raw vegetables; red with wild boar terrine, beef stew or Caen-style tripe.
