Definition: Distillation

A process consisting of partially vaporising a liquid mixture, then condensing the vapours formed to separate them. The most well-known example is the distillation of wine and its by-products to extract alcohol. This distillation produces marc, lees and, after a special ageing process, cognac and armagnac.
