Definition: Cream

Crème in English (pronounced "krîme"). The sweetest style of sherry with a good length on the palate. It is obtained by blending sweet Pedro Ximénez and Moscatel wines. It has a very dark colour. Pale cream is a similar sherry that has been discoloured by treatment with oenological charcoal. See sherry.
