"Vin cuit" or "raisinée" is a concentrated fruit juice (apple or pear) that requires approximately 24 hours of cooking, stirring constantly. It takes 10 litres of fruit juice to obtain 1 litre of "raisinée". It is usually prepared in batches of 100 litres during the season so that there is always a supply on hand. "Cognarde" or "cougnarde" is a mixture of apple, pear and quince juice (mostly), cooked in the same way.
