New Provençal appellation created in 2005 for red and rosé wines from the Var department in the municipalities of Callas (part), Fréjus, La Motte, Puget-sur-Argens, Roquebrune-sur-Argens, St.-Raphaël, and Trans-en-Provence (part).
Red wines: Grenache, Mourvèdre, Syrah at least 60% of the grape varieties. Secondary grape variety: Cinsault.
Rosé wines: Grenache, Mourvèdre, Syrah, Tibouren, at least 80% of the grape varieties. Additional grape variety: Cinsault. At least of the main grape varieties are present in the vineyard. Tibouren up to 10% from 2015, then 20% in 2020. ABV 11.5% for rosé wines, 12% for red wines. Rosé wines: 50% of wine from direct pressing. Ageing until at least 1 March of the year following the harvest.
Red wines: no carbonic maceration. FML completed. Ageing until 1 November of the year following the harvest, including a minimum of 6 months in oak barrels. Rosé wines can be kept for 2 to 3 years, red wines for 4 to 5 years. Ideal serving temperature: between 8 and 10°C for rosé, between 15 and 16°C for red.
Rosé wines pair well with sea bream with tarragon or fennel, chicken livers with morel mushrooms, or red mullet with Parma ham and fennel. Red wines pair well with guinea fowl with pears or thrush with grapes.
