Definition: Conservation

A wine will keep well if the prerequisites of terroir, cultivation, yield, maturity and vinification are scrupulously respected. The better the wine initially, the more magnificent its future will be, and the later and longer its peak. All these factors influence the price of the wine. The rules of good storage must be followed at all stages of vinification, whether in vats, barrels or bottles. The practice of repeated topping up protects wines from oxidation.
