Production area: just over 410 hectares with a yield limited to 40 hectolitres per hectare. White grape varieties: Grenache (together with Grenache Gris in a maximum proportion of 30% for the production of white wines); Complementary grape varieties: Macabeu, Marsanne, Roussanne, Tourbat (locally known as Malvoisie) and Vermentino. These grape varieties must together represent a maximum of 30%, with each variety not exceeding 15%. Grey: Grenache (combined with Grenache Blanc) for the production of white wines. These two grape varieties must together represent a minimum of 70%. Also authorised as complementary grape varieties for the production of rosé wines in a maximum proportion of 30%; black: Grenache, Mourvèdre and Syrah; together they must represent a minimum of 60%. None of these grape varieties may represent more than 90% on their own; complementary grape varieties: Carignan and Cinsault. Vinified as dry white, dry rosé and dry red wines. White wines may only leave the producers' cellars after a minimum period of storage until 1 March of the year following the harvest. It can be stored for 5 to 10 years for red wine. White and rosé wines should be consumed quickly. Ideal serving temperature: between 8 and 10°C for white wine; between 10 and 12°C for rosé wine; between 15 and 17°C for red wine. Pair with: rosé with poultry in sauce, paella, fish, anchovies or Catalan charcuterie accompanied by raw vegetables; red with stew, game or any other red meat.
