This operation consists of using very sharp scissors to remove grapes from a bunch that do not meet the required quality standards (table grapes and high-quality wines, late harvests in particular), berries, pedicels or other unpresentable items (aborted, rotten, broken, burst, poorly coloured, etc.), berries that are located inside the bunch and cannot grow or ripen, and those that, although located on the outside, are too tightly packed. The aim is to promote quality and marketability.
