Loire Valley region in Touraine. Production area located on the left bank of the Loire, southeast of Blois, more precisely within 24 municipalities in the Loir-et-Cher department. Classified as an AOC in 1993. Area under production: just over 380 hectares. White grape varieties: Sauvignon (minimum 60%, maximum 85%); Arbois (or Menu Pineau), Chardonnay and Chenin as complementary varieties; reds: Gamay (minimum 50%) and Pinot Noir; Cabernet Franc, Cabernet Sauvignon, Côt and Pineau d'Aunis as complementary varieties. Vinified as white (a small portion as sparkling), rosé and red. A blend of at least two grape varieties is mandatory. They are drunk young, sometimes after a few years of ageing, depending on the vintage. Ideal serving temperature: between 8 and 10°C for white and rosé; between 14 and 16°C for red. Pair white wines with smoked salmon, pike, grilled red mullet, scallops Meunière or sole with almonds; red wines with roast veal or veal paupiettes.
