Wines that coat the inside of the bottle after long ageing are wines that have undergone minimal filtration. Given that filtration cannot eliminate only the undesirable elements and that, as a result, useful and positive elements of the wine are lost during filtration, wines that coat the inside of the bottle are a sign of quality.
In this case, slow and gradual decanting into a carafe is useful to remove the sediment from the glasses.
