It is also the home of vin jaune, which has its own appellation, AOC Château-Chalon. Vin jaune, formerly known as "vin de gelée" (jelly wine), is said to have originated in the village abbey, which planted the vineyard in Château-Chalon and quickly made this excellent wine a product appreciated far beyond the region's borders. Henri IV, Queen Juliana of the Netherlands and Tsar Nicholas II of Russia were all great fans of Château-Chalon.

Today, around forty winegrowers share the appellation's 50 hectares. They produce wines that are spicier, more full-bodied and with better ageing potential than vin jaune wines in general.
