Definition: chabrot

Faire chabrot is an expression from south-western France that refers to pouring red wine into soup or broth when there is only a little left. The back of the upturned spoon marks the right level of the purplish mixture. This food symbol, reserved for men, is associated with strength and virility. Those who are allowed to do chabrol at the age of twelve or fourteen are considered to have left childhood behind.
