Definition: centrifugation

Centrifugation is a harsh clarification method that is not used on quality wines. Filtration, which is often used even on quality wines, is less harsh on the wine, but its opponents criticise it for indiscriminately removing undesirable substances (such as yeast) along with others that it would be desirable to retain.
