Definition: Cavaillonnage

Back
To protect the vines from winter frosts, winegrowers pile earth around them. This task is called 'cavaillonnage'. Cavaillonnage is carried out by ploughing, with the blades digging the inter-row between the vines. It also buries weeds, which will turn into humus.

At the end of winter, the soil must be removed from around the vines: this is called "décavaillonnage". See this term.
