Back To protect the vines from winter frosts, winegrowers pile earth around them. This task is called 'cavaillonnage'. Cavaillonnage is carried out by ploughing, with the blades digging the inter-row between the vines. It also buries weeds, which will turn into humus.
At the end of winter, the soil must be removed from around the vines: this is called "décavaillonnage". See this term.
