The Grenache, Lladoner Pelut Noir, Mourvèdre and Syrah grape varieties must represent a minimum of 50%; complementary grape varieties may represent a maximum of 10%, including Counoise, Piquepoul and Terret. Vinified as: mostly rosé and some red. Storage: rosé should be drunk young, within 2 to 4 years for red. Ideal serving temperature: between 10 and 12°C for rosé, between 15 and 16°C for red. Pairings: rosé with grilled meats or charcuterie, with or without raw vegetables; red with suckling pig stew.
