Definition: butter

Back
The aroma of fresh butter, similar to fresh hazelnuts, brioche and toasted bread, is found in certain great dry white wines made from Chardonnay grapes. This aroma is also sometimes present in sweet white wines. On the other hand, the smell of rancid butter is a fault characteristic of a bad wine, often due to lactic bacteria contamination.
