Back Cooperage term. Toasting of the inside of the barrel with wood chips during manufacture. This gradual toasting and its intensity bring out the flavours and aromas of the wood according to the winemaker's wishes. After bending, the barrel is re-toasted at the customer's request and according to the wine (search for aromas through thermal degradation by obtaining a "caramelisation" on the inner wall of the shell).
