Back Absolutely unique in Champagne, Bollinger's "Vieilles Vignes Françaises" is a living relic of what champagne must have been like in the past, before French vineyards were ravaged by phylloxera. Mysteriously, in Aÿ, a few plots of ungrafted vines have resisted the aphid that came from America. The Bollinger family decided to preserve them. This charter also specifies the ageing times and conditions.
