Definition: animelles

They were once highly prized in the East, in Mediterranean countries and in France under Louis XV. The "Dictionnaire portatif de cuisine" (Portable Cookery Dictionary), published in 1787, suggests three ways of frying them, but they can also be prepared in a fricassee or with a vinaigrette dressing.
