Animal-like aromas reveal red wines that are evolving, leaving behind the primary aromas of youth to enter the secondary or even tertiary phase. They are characterised by a wild side, with notes of fur, leather, musk and civet. These evolved and complex aromas are discovered during bottle ageing in a reductive environment. Once sought after in old red wines, they are now often perceived as a fault.
