Spanish word referring to a certain type of sherry. Amontillado sherry, which is amber in colour and sweet, is aged for a long time under a veil (8 years). It then loses its flor veil, oxidises and takes on an amber colour. It was originally produced near the town of Montilla, hence its name. It is one of the most sought-after types of sherry.
