A chemical compound produced by the oxidation of alcohol which, in small quantities, contributes to the aromatic richness of wine. Wines aged under a veil, such as sherry or Jura's vin jaune, contain aldehyde aromas that give them a characteristic nutty and cinnamon flavour.
