Technique
Characteristics
The 5 eaux de vie come from the separation of 5 marcs from 5 different plots. Particular attention is paid to the quality of the storage of the gênes and the monitoring of their fermentation. In the case of white gênes, they must ferment in airtight tanks to prevent oxidation. The process is different for red genes, as they ferment with the juice during the cuvaison. The management of red genes is simpler than that of whites.
Oenology
The 5 fermented marcs (Perrières, Charmes, Clos des Bouchères, Tesson and Luchets) were distilled in the same way on the family still, at a high degree, close to 70% vol. They were aged separately in glass carboys for over 4 years. The alcoholic strength of these eaux de vie was gradually reduced to bring them down to a marketable level of 45°. On the basis of tasting alone, the estate decided to present the Luchets eau de vie at a slightly lower alcoholic strength (42°), as this dilution allowed it to assert its character more strongly.
Suggestions for accompaniment
We advise you to serve them at cellar temperature, in 1cl doses for the 5 lieux dits.
