Vineyard of 70 hectares, average age of vines: 35 years. Density of 10,000 vines/hectare. Environmental viticulture
Oenology
The grapes are harvested by hand with the greatest care and at optimum ripeness when nature permits. The grapes are transported to the manual and vibrating sorting tables in small crates. The final selection has been made by optical sorting since 2011. The crushing that follows is delicate. Fermentation takes place over a period of around ten days, punctuated by regular pumping-over, delestage or punching down of the cap, specific to each batch. This is followed by a maceration phase lasting around twenty days. 39 vats are used for this vinification. Vinification using indigenous yeasts from each parcel. Aged in 100% oak barrels, half of which are new.
