Technique

Viticulture

The Dauphine vineyard, with a surface area of 20ha, is planted on clay-limestone soil and Fronsadais molasse. It is planted with 6,300 vines per hectare, with 1.50m between vines. The average age of the vines is 33 years. The vineyard is ploughed in the traditional way, with leaf removal on one side and green harvesting. Harvesting is done manually.

Oenology

When the grapes arrive at the winery, they are sorted twice, before and after the de-stemmer. The berries are placed in vats by gravity. La Dauphine is equipped with 34 temperature-controlled vats (concrete and stainless steel) which allow for parcel-based vinification. Vatting lasts 20 days on average. The Dauphine wine is aged in oak barrels (1/3 new) for 12 months in a semi-buried barrel cellar.
