Viticulture

Green operations: disbudding, splitting, leaf thinning, thinning out, splitting.

Oenology

Manual harvest in crates with 5 successive sortings. Different operations depending on the plot and the vintage: multiple small pumping over, delestage, pigeage. Aged in new barrels from 40 to 60%, one-wine barrels 35 to 50% depending on the vintage. Bottled 21 months after the harvest.
