Technique

Viticulture

Average age of the vines: 38 years. Soil geology: Clay and sand on iron dross and old sand on clay. Rootstocks: 101-14, 3309, Riparia. Planting density: 6,000 to 8,000 vines/ha. Vineyard cultivation by ploughing or grassing without the use of herbicides. Certified integrated vineyard management. In conversion to organic farming since 2010. Green operations: disbudding, splitting, leaf thinning, thinning out, splitting.

Oenology

Manual harvest in crates with 5 successive sortings. Different operations depending on the plot and the vintage: multiple small pumping over, delestage, pigeage. Aged in new barrels from 40 to 60%, one-wine barrels 35 to 50% depending on the vintage. Bottled 21 months after the harvest.
