Viticulture
This small vineyard of barely 8 ha remained for a long time in the shadow of the great local names. The owners of Chasse-Spleen acquired it in 1988. The 35 year old vines "descend" towards those of Château Margaux. Ferrière is the smallest C.C. in the Médoc. The soil is composed of deep Garonne gravel deposited on limestone marl. Traditional cultivation (shoeing, de-shovelling).
Oenology
Manual harvesting. Vinification in temperature-controlled stainless steel vats. Maceration for about 20 days during vinification. Malolactic fermentation in barrels. Traditional ageing for 16 to 18 months in oak barrels (60% renewed every year). Fining with egg whites in barrels.
Suggestions for accompaniment
Beef steak with shallots - Roast veal in a casserole - Duck breast - Guinea fowl with morels.
