Founded in 1829 in Aÿ, the vineyards of Maison Bolliger covers 174 hectares, most of which are classified as Grands and Premiers Crus.
Oenology
The Cuvée Spéciale, created in 1911, is a champagne with character, blended mainly from Pinot Noir, complemented by Chardonnay and Pinot Meunier. Made exclusively from the first pressing, dosed between 7 and 8 g/l, and aged twice as long as the norm with reserve wines kept for up to 15 years in magnums, it expresses purity, finesse, complexity and aromatic richness.
