Viticulture
The vines are located in the commune of Mérignat, halfway between Geneva and Lyon, in the foothills of the Jura mountains. The soil is clay-limestone scree on steep slopes of up to 60%. The vines face east/south-east/west. They are up to 50 years old. The estate uses organic farming methods. The vines are ploughed under the rows, and grass is controlled by mowing.
Oenology
The grapes are pressed and placed in temperature-controlled vats, then fermented at low temperature. When the must has reached around 6% alcohol, fermentation is stopped by cooling, and the wine is coarsely filtered and bottled. The wine is then stored in upright bottles for at least two months, to allow the yeasts to get back to work. The wine reaches 7-8% alcohol. The deposit from disgorging is removed, and the wine is corked via a wirehood.
