Viticulture

The estate has been in organic conversion since 2013, with the ECOCERT label. Surface area for this cuvée: 1.1 hectares. Number of bottles produced: 6600. Origin of the grapes: a single plot located at an altitude of 350 m on the Causse, at a place called Rassiels. At the corner of this plot there is a cherry tree. Terroir of red clay on a limestone base. Average age of the vines: 40 years. Density of vines per hectare: 4500. Yields (hl/ha): 45.

Oenology

Vinification and maturation in cement vats for 12 months.

Château Combel La Serre is located on the limestone plateau of Cahors, a great source of young talented winegrowers who are signing the revival of the AOC. It is a family property now managed by Julien and Sophie Ilbert, a couple of winemakers. The Ilberts have been on this land since the beginning of the 20th century. For a long time they took their grapes to the cooperative cellar, but things changed in 1998. It was then that the family took the plunge and decided to make their own wines. More recently, in 2013, they undertook and then succeeded in converting to organic farming and decided, since 2014, to favour parcel selections in order to create new cuvées. And it has to be said that the whole range is excellent, even the so-called thirsty wines!
