In its 2nd year of conversion to organic farming. A true Clos planted in 1959, located under the village of Aluze and facing due south. The soil is composed of Lias marl enriched with a high level of stony soil from the entroque limestone. The Clos des Roches Pendantes (its exact name) has a very old reputation, as it is mentioned in 19th century works dealing with Burgundy viticulture.
Oenology
Total destemming - Natural yeasts - Vatting time: 5 days of cold maceration and 6 days of active phase - Control of TO - Vertical pressing before the end of alcoholic fermentation - Aged in barrels, 25% of which are new - Duration of ageing: 11 months - Bottled by gravity, without fining or filtration.
Suggestions for accompaniment
Roast poultry - Sweetbreads with morel mushrooms - Rack of veal cooked at low temperature.
