This is one of the few historic estates in the Languedoc, created in the 1970s by Jean-Pierre Jullien (Olivier's father) and taken over in 2003 by Isabelle and Vincent Goumard, young and passionate winemakers. Their cuvée Terre de Jonquières expresses the breed of a clay-limestone terroir sprinkled with pebbles. It is an extremely elegant wine, salty and salivating, fresh, delivering notes of garrigue of great class. Bettane & Desseauve: 96/100

Technique

Viticulture

Terre de Jonquières is the successor to L'Infidèle and takes up its spirit. The terroir is essentially composed of limestone gravel and clay-limestone. The entire estate is certified organic. Small yields. Old vines. Ploughing, organic amendments, manual green work, controlled natural grassing when possible.

Oenology

Manual harvesting. Severe sorting of the grapes in the vineyard and then on a sorting table in the cellar. Vinification on indigenous yeasts to accompany the revelation of the terroir. Aged for 18 months. Barrels of 500 and 600 litres for 60 to 80%.

Suggestions for accompaniment

Roast venison with juniper, parsnips and chestnuts - Fagioli Risina from Lake Trasimeno and bacon from Colonnata.
