The Clos des Corbassières is a historic estate located at the gates of Sion and is made up of 52 sun-drenched terraces clinging to the vertiginous slope of the Mont d'Orge hill. The terroir is composed of schist and limestone. The oldest vines of the former estate (La Corbassière-Imhof) form the heart of the Clos.
Vinification in whole bunches. Made from the oldest vines in the Clos (90 years old), it is aged in 500 litre tuns for 18 months.

Guinea fowl with lemon - Veal shank confit - Braised lamb mice, fennel gratin.
