Viticulture
The grapes come from a small plot of just over one hectare in the southern sector of Jardín Altamira, located in Paraje Altamira (Uco Valley) at an altitude of 1,200 metres. This area is very special because of the heterogeneous soil profiles created by the river currents that formed the alluvial fan. On the plot, the soil profile shows 80 centimetres of silt-rich topsoil with dissolved limestone and, from there, large granitic rocks with associated limestone. The entire vineyard is organic.
Oenology
The grapes from this terroir were harvested at an ideal stage of ripeness. Vinified for 25 days in epoxy-free concrete vats. Fermented with 15% whole bunches and indigenous yeasts. The temperature was maintained at 26°C throughout the process, in order to preserve the purity of the vineyard aromas. It was then matured in 3,500-litre French oak tuns without toasting for 15 months. It underwent very gentle filtration before being bottled, where it underwent a second 12-month ageing period.
Suggestions for accompaniment
To be enjoyed after an hour in a carafe with grilled red meat (steak, entrecote, roast beef).
