In 2017, Scottish mountain guide James Abbott set down his bag in Saint Gervais while waiting for his visa for Canada. He has never left. He belongs here, and his dream of creating a distillery in the mountains is about to come true. His gin has a nose of great purity and complexity, almost reminiscent of absinthe. There's also a hint of genepi and a discreet hint of juniper. The attack is fine and broad, for a fine, aromatic gin with a peacock's-tail finish.

Characteristics

The Saint-Gervais distillery opened its doors in 2017, when a donkey shed was transformed into a place for experimentation and sharing. An authentic place where Mont Blanc Gin and Mont Blanc Whisky are now distilled. It is 10km as the crow flies from the summit of Mont Blanc, which is located in the commune of Saint-Gervais.

Oenology

The gin is distilled in 100L copper stills. Each bottle is numbered and hand-signed. Corks, labels and packaging are positioned by hand. Each bottle is unique.

Suggestions for accompaniment

It can be drunk neat as a brandy or, as James recommends, with an ice cube and orange peel or lime zest. With tonic, choose it lightly sweetened and with a mild bitterness.
