The most important grape variety in the canton, but the most discreet at Satyre. Chasselas occupies a little more than 3% of the estate. It is a classic chasselas aperitif and goes wonderfully well with a caramel gruyère. In its deep soil, it becomes more fruity and each year spreads its exotic flavours of lemon, pineapple and, more locally, quince and pear.

Technique

Viticulture

The plots are located in Begnins, with a few square metres in Luins. The soils are derived from limestone bedrock, more or less developed on a sandy-stony Rhodanian moraine. Located at the foot of the Jura, these plots benefit from the drying power of the Joran, which creates a favourable microclimate. The work in green is done by hand, from pre-pruning to harvesting.
