This is the type of wine that has made the reputation of the appellation since Henry IV, who made it one of the pride of his royal table. This plot selection maximises the characteristics of the Petit Manseng harvested at an ideal level of maturity: an extraordinary nose of purity and precision, with the finest palette of white truffles and fresh citrus fruits; on the palate, it has a tension and vivacity worthy of a great dry white wine which carries its mellow structure away for long seconds with a crazy energy. Destined for (long) cellaring, it is quite simply one of the greatest mellows in France. To drink it today, serve at 10-12° and decant for 2 hours to enjoy its aromas. Bettane & Desseauve: 17/20

Viticulture

Circular hillside facing south. Altitude 250 m. Marrote is the name of the barn located at the bottom of the plot. Plot selection of 20 rows on the edge of a stream in a deep glacial pebble flow. Yield 30 hl/ha. 2200 bottles produced. High vines aged 21 years planted at 3000 vines/ha according to the age-old tradition of the region. Double Guyot pruning.

Oenology

Hand-picked in the first half of November. Long and gentle pressing. Natural fermentation with indigenous yeasts in 400 l barrels. No chaptalisation. No acidification or deacidification. Aged for 11 months in wood on fine lees, then 18 months in stainless steel tanks, followed by several years of rest in bottles.
