Technique
Characteristics
The Williams pear is grown in ideal climatic conditions under the sun of Western Styria. Light green to lemon yellow when ripe, they are often slightly reddish on the side exposed to the sun. During the harvest period, the ripeness of each pear is checked on the tree, and they are only picked one by one when they are fully ripe. This is the sine qua non for them to fully develop their delicately fruity, sweet and spicy aromas. To make sure of this, the arboriculturist picks the pears in several passes, up to 15 per orchard!
Oenology
To preserve the fruit's precious aromas, the ripe pears are fermented on site on the day they are harvested. The pear must is then transported to our distillery, where it is gently distilled and then stored for ageing.
