As soon as he took over the management of the estate in 1922, Baron Philippe de Rothschild became so passionate about the family property that he included Mouton in the circle of the 1st GCCs by ministerial decree in 1974. The vines are planted on a superb ridge of deep Garonne gravel. The vine density is 8,500 vines/ha. The average age of the vines is 45 years, with a few hundred-year-old vines in the Carruades parcel!
Oenology
After a light crushing, the grapes are gravity-fed into vats. 90% of the alcoholic fermentation takes place in vats, with the remainder in barrels. A 3-week maceration period is followed by blending when the wine is put into barrels (100% new wood), after malolactic fermentation. The barrels spend 6 months in the cellar and then 12 months in an underground cellar at Mouton-Rothschild.
