Viticulture
Planted on one of the region's most perfect gravelly hilltops, the La Lagune vineyard covers 80 hectares, where Caroline Frey has been working for many years to introduce environmentally-friendly viticulture based on organic and biodynamic farming practices. The official switch to organic viticulture began in 2013, with certification scheduled for the 2016 harvest.
Oenology
The grapes are harvested by hand, and the grapes are sorted very carefully to ensure they are perfectly ripe. The ultra-modern 2000 m2 vat room is equipped with 72 temperature-controlled stainless steel vats to enable very precise, parcel-by-parcel vinification. The grand vin and second wine are blended after fermentation, around 3 months after the harvest. The wine is aged for 18 months in French oak barrels (55% new barrels).
